Equipment

  • Air fryer

Ingredients
  

  • 6 eggs
  • 3/4 cup 1% cottage cheese
  • 1/2 cup diced red bell peppers
  • 1 green onion or scallion, thinkly sliced (white and green parts)
  • 1/2 cup grated cheddar cheese
  • cooked turkey, bacon, ham, etc. optional

Instructions
 

  • Preheat your air fryer to 160 °C (350 °F). Grease 2 x 6-inch cake pans well (sides and bottom).
  • In a bowl, add the eggs and cottage cheese. Blend using an immersion blender until smooth. Alternatively, add the ingredients to a blender and blend until smooth.
  • Add the chopped vegetables and stir.
  • Divide the egg and vegetable mixture evenly between the pans. Top with grated cheddar cheese.
  • Air fry each one for 15 minutes or until the eggs are set and cooked through.
  • Allow to cool slightly. Remove the frittata from the pans, slice and enjoy with toast, potatoes or your favorite side dish.
