Air Fryer Frittata is an easy, protein-packed meal filled with veggies and cheese. It comes together quickly thanks to the speedy cooking of the air fryer.
1green onion or scallion, thinkly sliced (white and green parts)
1/2cupgrated cheddar cheese
cooked turkey, bacon, ham, etc. optional
Instructions
Preheat your air fryer to 160 °C (350 °F). Grease 2 x 6-inch cake pans well (sides and bottom).
In a bowl, add the eggs and cottage cheese. Blend using an immersion blender until smooth. Alternatively, add the ingredients to a blender and blend until smooth.
Add the chopped vegetables and stir.
Divide the egg and vegetable mixture evenly between the pans. Top with grated cheddar cheese.
Air fry each one for 15 minutes or until the eggs are set and cooked through.
Allow to cool slightly. Remove the frittata from the pans, slice and enjoy with toast, potatoes or your favorite side dish.
