Ingredients
  

  • 3 very ripe bananas
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup canola oil
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup rolled oats
  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat over to 400°F. Grease a 12-cup muffin tin with oil or line it with paper liners.
  2. In a large bowl, add the bananas and mash with a fork. Add the egg, milk, oil and sugar. Mix to combine.
  3.  Add the cinnamon, nutmeg, oats, flour, baking soda and baking powder. Mix until almost combined.
  4. Add in the blueberries and mix until combined, being careful not to overmix.
  5. Spoon the batter into the muffin tin and bakefor 18-20 minutes until golden brown.
  6. Allow to cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.
