Greek Chickpea Salad
This satisfying salad is a great recipe to make all-year round. It comes chickpeas, tangy feta and olives and vegetables for an easy lunch.

chickpeas, drained and rinsed

sliced cucumbers, cut in half

halved cherry or grape tomatoes

bell pepper, diced (red/orange/yellow)

chopped red or green onions

crumbled feta

sliced Kalamata olives

chopped fresh dill
Dressing

olive oil

red wine vinegar

dried oregano

salt and pepper
Instructions
Place salad ingredients into a large bowl.
Mix dressing ingredients together and pour over salad. Mix well. Refrigerate until ready to serve or at least two hours for the flavours to come together.
