Healthy Carrot Cake Baked Oatmeal

This nutritious baked oatmeal has all the flavors of traditional carrot cake but is made into a healthy, breakfast version.

Ingredients
  

  • 2 eggs
  • 1/4 cup brown sugar
  • 1.5 cups milk
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1 cup grated carrots (about 1 large carrot)
  • 1/3 cup raisins
  • 1/4 cup chopped walnuts
  • 1/4 cup shredded unsweetened coconut
  • Greek yogurt (optional), for serving

Equipment

  • 1 baking dish about 8x8 or equivalent

Method
 

  1. Preheat the oven to 400°F. Grease a baking dish with oil or nonstick spray.
  2. Add all the ingredients into a large mixing bowl and stir to combine.
  3. Pour into the baking dish and bake for 30-35 minutes until the oatmeal is set.
  4. Serve warm. Top with a dollop of Greek yogurt if desired or additional milk.
