- Preheat oven to 425°F. Line a baking tray with parchment paper.
- Lightly flour the parchment paper and place the pizza dough on top. Use your fingers to spread the dough evenly over the pan.
- Drizzle about 2 tbsp of olive oil evenly over the pizza dough.
- Using a mandolin or sharp knife, carefully slice the potatoes to about 1/8-inch thickness.
- Place the sliced potatoes in a bowl and drizzle with the remaining olive oil, flaky sea salt to taste, black pepper, and garlic powder.
- Arrange the potatoes evenly over the pizza dough. Top with a little more flaky sea salt if desired and more rosemary.
- Bake in a preheated oven for 15-20 minutes until the crust is golden and the potatoes are cooked and soft. Cool for 10 minutes and cut into slices.
