Zucchini Bread Oatmeal

Zucchini bread oatmeal is a veggie loaded breakfast that is hearty and healthy and has all the flavors and warm spices of zucchini bread you love and it is all made in one-bowl!

Equipment

  • 1 baking pan 8 x 8 or similar size

Ingredients
  

  • 2 cups rolled oats
  • 2 cups milk
  • 1 tsp cinnamon
  • 14 tsp cloves
  • 2 tbsp brown sugar
  • 1 cup grated zucchini
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins or chopped dates

Instructions
 

  • Preheat oven to 400°F.
  • Lightly grease an 8-inch baking pan with oil or nonstick cooking spray.
  • Combine all ingredients together in a bowl and mix well.
  • Pour into prepared baking dish and bake in a preheated oven for 30-35mins or until oatmeal mixture is no longer wet.
  • Serve warm topped with more milk. This recipe also reheats well. Just top with milk of your choice and reheat in the microwave.
