How to Assemble a Kids Lunch Board

Snack boards for kids make a great lunch or snack. They are an opportunity to provide a variety of foods to your child and allow them to choose what they want to eat - this works well using the Division of Responsibility Feeding Method that you can read more about here.

This post was developed in partnership with Pure Flavor, however, as always, all opinions are genuine.

Just vary the portion sizes based on how many people you are feeding.

Including some whole grain pita or crackers provides carbohydrates which give us energy and fibre. The cheese adds some protein and fat. Include a variety of vegetables and fruit for antioxidants, vitamins and minerals and fibre.

Here is my recipe for this lunch board:

  • Whole wheat pita
  • Whole wheat crackers
  • Cheddar and mozzarella cheese cubes

Pure Flavor® Poco Bites® Cocktail cucumbers – cucumbers provide some fibre and are also high in water so can contribute to hydration which can be helpful for children who have a hard time drinking enough fluids.

Pure Flavor® Sangria® Medley Tomatoes – one cup of tomatoes provides 500mg/10% of the recommended amount of potassium which is an essential mineral and helps support heart health.

Pure Flavor® Aurora Bites Mini Sweet Peppers – sweet peppers are a good source of vitamin C. Vitamin C is an antioxidant that helps protect our cells from damage. Vitamin C also helps our bodies absorb iron from plant-based foods.

Your favorite hummus

Other things you can add in or substitute:

  • hard boiled eggs
  • leftover sliced chicken
  • Tzatziki dip
  • Apple slices
  • Peanut butter
  • Tuna sandwiches on whole wheat bread cut into quarters
