(AD) Welcome to part 1 of the new series I’m doing in partnership with the Canadian Sugar Institute (@cdnsugarnutr ), where I put ChatGPT recipes to the test. First up is this high-fibre blueberry muffin recipe.

I asked for a recipe that uses simple ingredients and pantry staples and opted for the lower-sugar version (just ¼ cup). I also added 2 tbsp of ground flaxseed for an extra fibre boost.

My whole family enjoyed these muffins, but personally, I found they were a touch dry, which is what ChatGPT predicted would happen when I cut the sugar. The flaxseed likely played a role too, since it absorbs moisture.

I would make these again and add a bit of extra milk or ½ a mashed banana for extra moisture.

Food science note: This recipe included sugar in the dry ingredients, which worked fine, but sugar actually behaves more like a ‘wet’ ingredient in baking because it dissolves, holds onto moisture, and helps create a more tender texture. This may have more of an impact in a cake or a more technical baking recipe.

Dry ingredients:
1 cup whole wheat flour

1/3 cup brown sugar (or use ¼ cup for a less sweet version)
1 tsp baking powder
½ tsp baking soda
½ tsp salt

Wet ingredients:
1 cup milk
1 egg
1/3 cup oil
1 tsp vanilla
½ a mashed banana (optional, may be a good idea if you use the lower sugar version to add more moisture)

When it comes to feeding kids, sometimes starting with less is more. Larger portions of food can be overwhelming for kids. I always start with a smaller portion, especially if I am serving something new or less familiar. They can always ask for more if they like it! This helps reduce pressure and can be more appealing for kids when they see it on their plate.

If I am offering something new, I also always have something familiar on the table that they can have, such as a fruit, vegetables, or even just bread. Something that they will eat if they don’t like the new offering.

The coziest winter breakfast recipe is here. #ad (@onedegreeorganics). This pear & almond baked oatmeal is the perfect cold-weather breakfast. Made with One Degree Organic rolled oats, juicy pears, slivered almonds, and warm spices, it’s cozy, nourishing (high in fibre!), and exactly what these chilly mornings call for.

If you know me or follow me, you’ll see that I post a lot of oatmeal recipes. I eat oatmeal pretty much every morning and make it for my family too! One Degree Organic Food rolled oats are always in my pantry (I grab them at Costco when they are on sale and stock up!). I love that they are sprouted because it helps unlock the nutrients, increasing absorption and improving their digestibility. Their oats are also certified glyphosate-free.

Here is the recipe:

Pear and Almond Baked Oatmeal

Ingredients
2 cups One Degree Organics rolled oats
1 tsp cinnamon
¼ tsp cardamom
1 tsp baking powder
2 tbsp chia seeds
2 cups milk of your choice (plant or dairy both work)
2 tbsp maple syrup
1 diced pear
¼ cup raisins (optional)
¼ cup slivered almonds

Grease a baking dish well (about 8x8 or similar size). Add all the ingredients except the almonds and stir to combine/mix well. Top with the slivered almonds. Bake at 400°F for 30-35 minutes or until the oats are set. Serve warm with additional milk and fresh fruit, if desired.
