There are so many versions of tortellini soup, this version is perfect for vegetarians and contains plant-based protein, iron and fibre from the white beans. The white beans soften in the soup and add a slightly creamy texture as well. 

How to make white bean tortellini soup?

Start by sauteing the onions, carrot, and celery in a little canola oil. Use a large soup pot or a Dutch oven. Once the vegetable soften, add the stock and water. To make the soup vegetarian, use vegetable broth instead of chicken. Depending on the salt content of your broth and flavour preferences, you may need to add more salt to the soup. Once the stock boils, add the tortellini and drained white beans. Simmer the soup until the tortellini is cooked, based on the package directions. Add the spinach and serve topped with Parmesan cheese. 

Variations of White Bean Tortellini Soup:

You can switch up a few things in this soup based on the ingredients you have around:

  • Use your favourite tortellini (cheese, meat, etc.) or ravioli. Frozen or fresh options work well. 
  • Use fresh or frozen spinach or your preferred green such as kale or Swiss chard
  • If you don’t have white beans, red kidney beans would also be delicious
  • If you a piece of Parmesan cheese rind, you could also add the to the broth for added flavour 
  • Most broth cartons are 1L but the soup needs more liquid. Rathe than open another carton, I use water but you could use all broth

Ingredients
  

  • 1 tsp canola oil
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 1 stock celery, chopped
  • 1 L reduced sodium chicken or vegetable broth
  • 2 cups water
  • 1 package frozen or fresh cheese tortellini (250-350g)
  • 1 can white kidney (cannellini) beans, drained and rinsed
  • 4 cups chopped baby spinach (or half a 300g block frozen whole leaf spinach)
  • Grated parmesan cheese for serving (optional)

Instructions
 

  • In a large pot, heat the oil and sauté onion, carrots and celery until softened, about 5 minutes.
  • Add the broth and water and bring to a boil. Add the tortellini and white beans and cook until the tortellini is cooked through (based on package directions). Add the spinach, stir until it is wilted and remove from heat.
  • Serve topped with grated Parmesan cheese if desired.
