Caramelized Onion, Goat Cheese & Arugula Tart

Sweet caramelized onions, tangy goat cheese and buttery puff pastry combine to make a delicius and elegant holiday appetizer. Add some fresh arugula after baking for color and fresh flavor.

This caramelized onion tart is an easy holiday appetizer that is sure to impress any guest this season. The sweet caramelized onions pair well with the buttery pastry, creamy goat cheese and peppery arugula.

Carmelized onions are sweet and delicious. They take time to make but are well worth it. This simple tart combines caramelized onions with tangy goat cheese for a great flavor combination. Put it on top of buttery puff pastry for an easy and elegant holiday appetizer. Adding arugula at the end adds freshness and peppery flavor.

Onions are a humble vegetable. They are affordable and always in abundance. When you cook them for about 30 minutes on low-heat, the get soft, golden and caramelized. You can use caramelized onions on hamburger, sandwiches, crostini and so many more things. They are so versatile and full of flavor!

This caramelized onion tart is a great holiday appetizer or it can be served for lunch or dinner. Just cut into however many slices you like – larger for a meal and smaller for an appetizer.

Ingredients:

Onions – regular white onions work best for this recipe. Use two large or three smaller ones. Tip: if you put onions in the fridge for 30 minutes before cutting, they won’t burn your eyes and make you cry.

Balsamic vinegar – balsamic vingear adds flavor to the onions and helps the browning/caramelization.

Puff pasty – all-butter puff pasty makes this tart decadent and delicious. Store-bought is so good these days there is no need to make your own (although go for it if you’d like!)

Goat cheese – this tart is toppe with crumbled goat cheese for a tangy flavor to compiemnt the sweet onions.

Egg – an egg is used to brush the puff pastry edges to help them get golden and crispy.

Arugula – fresh arugula is added over the tart after cooking. It adds great color, freshness and peppery flavor. If you don’t have arugula, check out this list of the best substitues.

Recipe Tips:

This tart is easy to make and will impress your guests. You need to set aside some time to prepare the onions but you can also do this a day in advance.

This recipe is best served and eaten warm. Reheating it could wilt the arugula and the puff pastry is not as crispy when reheated.

Caramelized Onion, Goat Cheese & Arugula Tart

Ingredients
  

  • 2 large onions, thinly sliced
  • 3 tbsp olive oil, divided
  • 1 tbsp balsamic vinegar
  • 1 sheet puff pastry
  • 1/2 cup crumbled goat cheese
  • 1 egg, beaten with 1 tbsp water optional
  • 1 cup arugula
  • salt and pepper to taste

Instructions
 

  • Heat 1 tbsp of the olive oil in a skillet over low-medium heat. Add the onions, stir them to coat with the oil, and arrange them evenly in the pan. Cook for 10 minutes, stirring occasionally, until they soften, then season with a pinch of salt and pepper. Add the balsamic vinegar and stir. Continue to stir them or move them around every few minutes to ensure they are browning evenly. If the onions are burning or looking dry, reduce the heat to low. Cook them for another 30 minutes or until they are very soft and deeply caramelized.  Let cool.
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly sprinkle it with flour. Roll out the sheet of puff pastry onto the lined baking tray into an 11×9 rectangle or any shape you want so that it is about 1/8 inch thick. If you are using pre-rolled puff pastry, feel free to leave it as is or roll it to be slightly thinner.
  • Brush the pastry with the remaining olive oil and arrange the caramelized onions evenly over the top, leaving about a ½ inch border of pastry all around.
  • Top with the crumbled goat cheese.
  • Brush the sides of the pastry with the egg wash for a more golden brown and crispy pastry edge.
  • Baked for 15-20 minutes until the edges of the pastry have puffed and the bottom is brown.
  • Cool for 10 minutes, then scatter the arugula over top.
  • For larger pieces, slice into 6 squares. For as maller appetizer bite, cut into 12 squares. Enjoy!
