Air fryer frittata is an easy, protein-packed meal. It is filled with vegetables and cheese and comes together quickly thanks to the speedy cooking process of the air fryer.
This healthy dish is a great way to start your day and will keep you feeling full. You can customize the vegetables and cheese you use and add cooked bacon, diced ham, or cooked crumbled sausage if you like.
Nutrition:
Eggs are a nutrient-rich food with vitamins and minerals such as iron, choline, selenium, and B12. Two large eggs contain about 13g of high-quality protein as well. To increase the protein further in this recipe, cottage cheese is added and blended with the eggs. Cottage cheese has 15g of protein in ½ a cup and just 100 calories (if you use 1% M.F). This addition increases the protein, adds calcium, and creates a fluffy frittata that no one can resist. If you think you don’t like cottage cheese, this is a great way to give it another try because it is smooth and blends well with the eggs.
This recipe can serve two or three people depending on appetites. When eating half the recipe, it contains over 30g of protein and when split into three servings, about 22g of protein per serving.
This recipe is also kid-friendly and a great way to get protein and colorful vegetables into little eaters.
Eggs and cottage cheese are both very affordable so this is a great cheap meal idea.
Ingredients:
This recipe comes together with a few ingredients and you can make substitutions based on what you have and yoru preferences.
Eggs – you can’t have a frittata without eggs. Use large or extra-large eggs in this recipe.
Cottage cheese – 1% or 2% milk-fat cottage cheese would work in this recipe. If you don’t have cottage cheese or don’t like it, you can substitute ricotta cheese.
Bell peppers – diced bell peppers are used in this air fryer frittata and add natural sweetness and crunch but you can use whichever color you like or different vegetables. Chopped broccoli or mushrooms would also work.
Scallions – add a fresh, mild onion flavor
Grated cheddar – grated cheddar is added on top but feel free to add your favourite melting cheese. Crumbled feta or goat cheese would also work. You can also leave this out if you like.
Optional add-ins – if you like a bit more of a salty bite, add cooked chopped bacon or turkey bacon, diced deli ham or turkey, or cooked, crumbled sausage. About ½ cup divided between the two pans would be plenty.
What do you serve with air fryer frittata?
You can serve this frittata with toast, hashbrowns, or potatoes. If you have it for lunch or dinner, adding a side salad would be a great option as well for more veggies and nutrients.
You could slice it and put it into a breakfast sandwich. For this option, you can omit the cheese on top and put it on the bread.
How long do you cook a frittata in the air fryer?
Air fryers cook quickly. This recipe divides the mixture into 2 6-inch cake/baking pans and each one cooks for about 15 minutes. Start to check your frittata after about 10-12 minutes to ensure it isn’t getting too brown on top. Use a cake tester or toothpick to ensure the eggs are cooked through.
Air fryers are often automatically set to 200 °C – this recipe cooks them at a lower temperature (160 °F) for a more even cooking process and to help the eggs cook through.
