Traditional Italian Potato Pizza

Potato pizza is a simple and traditional Italian recipe. You may not have thought to combine bread and potatoes but the combination of these simple foods with olive oil, flaky salt and fresh rosemary is so delicious and the ultimate comfort food.

The traditional version of this recipe doesn’t contain any cheese or meats and is naturally vegan.

Yellow fleshed potatoes work best for this recipe. They are slightly waxier and bake up soft and tender on the pizza dough.

Ingredients
  

  • 1 pizza dough, homemade or store bought
  • 1/4 cup extra virgin olive oil
  • 3 yellow potatoes
  • 2 tbsp fresh rosemary, choppe
  • flaky sea salt, to taste
  • 1/4 tsp garlic powder

Equipment

  • 1 Sheet pan or pizza pan

Method
 

  1. Preheat oven to 425°F. Line a baking tray with parchment paper.
  2. Lightly flour the parchment paper and place the pizza dough on top. Use your fingers to spread the dough evenly over the pan.
  3.  Drizzle about 2 tbsp of olive oil evenly over the pizza dough.
  4. Using a mandolin or sharp knife, carefully slice the potatoes to about 1/8-inch thickness.
  5. Place the sliced potatoes in a bowl and drizzle with the remaining olive oil, flaky sea salt to taste, black pepper, and garlic powder.
  6. Arrange the potatoes evenly over the pizza dough. Top with a little more flaky sea salt if desired and more rosemary.
  7. Bake in a preheated oven for 15-20 minutes until the crust is golden and the potatoes are cooked and soft. Cool for 10 minutes and cut into slices.
