Baking in the air fryer saves time and gives these bars the perfect texture: lightly crispy on top with a soft, custard-like center They’re perfect for breakfast, a midday snack, or to satisfy those afternoon sweet cravings—especially with a warm latte or cup of tea. Ingredients:
2 cups rolled oats
1 tsp baking powder
1 tsp cinnamon or pumpkin pie spice
2 tbsp chia or flax seeds
1 cup pumpkin puree
2 eggs
¼ cup brown sugar or maple syrup (both work equally well, use what you prefer and have on hand)
½ cup milk
¼ cup mini chocolate chips
Grease an air-fryer basket well. Add all the ingredients to it and mix well. Top with the mini chocolate chips. Air fry at 160°C (320°F) for 20-25 minutes until the oatmeal has set and the liquid has been absorbed. Slice into squares and enjoy. Earlier this month, we celebrated National Breastfeeding Week in Canada and this type of snack meal is perfect for anyone trying to eat healthy, but particularly good for new moms who are breastfeeding and need fast and nutritious meals. As a breastfeeding mom myself, I love this type of lunch – it’s satisfying, nutritious, and easy to eat. My plate had two hard-boiled eggs, whole grain crackers, cheese, kiwi and cut-up celery and carrots. Sub any fruits and vegetables you like and have on hand. Eggs are a nutritional powerhouse and have 14 essential nutrients, including 13g of high-quality protein per two eggs. Breastfeeding people have higher nutritional needs and eggs are a great addition to a mother’s diet. If you are a new parent, it can be hard to find time to meal prep but taking a few minutes to hard boil and peel eggs (or have a partner or support person help you) to have on hand for meals or snacks is a great idea. When we have healthy items prepped in advance, we are more likely to eat them and make better choices overall! We recently travelled to Italy for two weeks to attend a family wedding. The breakfast buffet consisted of desserts, deli meats and cheese, buns, and some yogurt, granola, and fruit. Knowing that this is a typical Italian breakfast, I was able to plan and brought some options from home to help me feel good when on vacation. I knew that if I ate pastries for breakfast, I would feel sluggish all day. I needed my energy for sight seeing and to keep up with my kids! As someone who usually eats oatmeal and fruit for breakfast, I brought a few cups of @bobsredmill oatmeal cups with flax and chia to ensure that I had some higher fibre options available. I also packed some bran buds and had some every morning with milk to help get enough fibre. We also bought some fruit and cut up vegetables from the local store to have healthy snacks available. Staying hydrated is also important, so just like at home, I would have lots of water in the morning before coffee to help with digestion. And since this was a vacation after all, I did enjoy a little bit of something sweet every morning with my coffee.
